Cut up a chicken breast, add lemon juice and a crust of oatmeal (keeps it gluten-free and keeps it more digestible), and then bake it instead of fry it.
Take a little arugula and citrus vinaigrette, red, golden beets and grapefruit.
The dressing is made out of orange juice concentrate, EVOO (extra virgin olive oil), a little shallot, sale, pepper and lemon juice.
Add arugula, beets and grapefruit on top.
